Brass Pans

A brass pan is a kitchen vessel bought in several sizes, and the listing names the design, such as a sauce pan or a khal batta kutti pan. The weight tells you how solid the pan is, and the diameter tells you how much room it takes on the stove. Choose by the size of the dishes you cook most often.

Brass should not hold sour food for long, so cook and store acidic dishes in another pan. Wash after use, dry at once, and polish with a soft cloth and a mild brass cleaner when the metal dulls.
